Why Fir Vanilla is the creme de la creme of honey


Vanilla Fir Honey

Premium Honey “Fir Vanilla” is the only Greek honey produced from the rare Black Fir trees of Mount Mainalo at an altitude of nearly 2,000m, the tallest mountain in the Menalon highlands in Arcadia, Peloponnese. This particular variety is certified organic, it does not come out in large quantities every year and has been granted Protected Designation of Origin due to its uniqueness and rare variety.


Fir tree honey is known as a honeydew, its honey is extracted from the sap and resin of the tree and not from the flower nectar. Honeydews are high in oligosaccharides, which are known for their prebiotic qualities that aid in digestion


How Fir Vanilla Honey was harvested

Fir vanilla honey is harvested between early May and mid-July. Its gets its name “vanilla” due to its light color, a shade between pearl and vanilla. Harvested at the same time as our other honey flavour Fir Honey, Fir Vanilla is separated from Fir Honey by extracting the lighter cream colours from the same honeycomb. Vanilla fir honey has a thick texture, with hints of vanilla and caramel flavour.

  • This honey is exceptionally low in moisture - just over 14%
  • It also has a much lower level of sugars than other honeys, being particularly low in glucose meaning it usually never crystallises.
