What is Retsina Wine

Retsina is a traditional Greek wine made for at least 2,000 years. Some of the grape variety used in producing Retsina is savvatiana and rhoditis. During the fermentation of white wines , a natural resin that is extracted from the Aleppo Pine (pinus halepensis) in Greece is added to it. The resin will be removed when its balsamic pine aroma is left in the wine.

The Retsina is best paired with seafood such as grilled seabass, sea bream, sushi, sashimi and grilled shrimps or lamb and savoury dips to bring out the tinge of bitterness with a refreshing aftertaste that is unique to the Retsina.
