Variety of grape: Agiorgitiko
Region: Agiorgitiko is cultivated exclusively within the limits of the region Nemea, where the wine PDO Nemea is produced.

Information: 
First, a sweet vinegar is created by two traditional products from grapes of the variety Agiorgitiko, red grape vinegar and Petimezi – concentrated grape juice. Then this dynamic mixture follows the steps of PDO NEMEA wine and ages in French oak barrels for three years. The result is a pure balsamic vinegar with complex aromas of vanilla and spices ideal to marinated venison, fatty fishes and to spice up green salads with nuts and dried fruits.

Tasting notes: Dark brown colour, rich body with aromas of vanilla and spices. Sour taste combined with a well-balanced sweetness and notes of ripe red fruits in the finish.

About the producer, Wisdom of Nature

A family owned organic producer of grape vinegar, balsamic vinegar and concentrated grape juice called Petimezi. Since 1888 till now, the family owned the vineyard in Nemea [Peloponnese region, famous wine production region in Greece] planting the famous indigenous grape variety Agiorgitiko. From producing wine in the old days, they are producing organic balsamic vinegar using the indigenous grape  since their forefathers.  All products are organic, does not use artificial additives, no sulfites, gluten-free and vegan friendly.  The family has a strong believe that a natural and healthy vine gives the best grape quality and high quality end products. 

Most importantly, the family is a strong believer in respecting the environment, the nature will return in great taste.
