Not All Extra Virgin Olive Oil Is the Same
Pick up any bottle of olive oil in a supermarket and you will likely see the words "extra virgin" on the label. Pick up a high polyphenol EVOO from a small Greek producer and you will see the same words.
Yet these two oils can be worlds apart in what they actually deliver. The label tells you how the oil was made.
It tells you nothing about how much polyphenol it contains.
Understanding that difference explains why some EVOOs are chosen primarily for everyday cooking, while others are enjoyed raw as part of a daily wellness routine — and it is the reason we stock two distinct Arkas olive oils at Botana&Tea.
What "extra virgin" actually means
Extra virgin is a production standard, not a polyphenol guarantee.
To qualify, an olive oil must be cold-pressed by mechanical means only — no solvents, no heat refining — and its free fatty acid content must fall below 0.8%.
These are meaningful quality thresholds. They tell you the oil has not been chemically treated or adulterated.
What they do not tell you is how rich the oil is in polyphenols, oleocanthal, hydroxytyrosol, or any of the other bioactive compounds that give a premium Greek olive oil its wellness properties.
Many commercially available EVOOs may contain substantially lower polyphenol concentrations than early-harvest high-polyphenol oils, although levels vary considerably depending on cultivar, harvest timing, processing, and storage.
What is consistent is that a bottle can carry the extra virgin label and still fall well short of the concentration required for the EU authorised health claim.

Why polyphenol concentration is what matters
EU Commission Regulation No 432/2012 authorises a specific health claim: that olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.
This claim is not available to every extra virgin olive oil — it can only be made by oils that meet a defined polyphenol concentration threshold.
In other words, the EU has drawn a line between olive oil as a food and olive oil as a functional daily wellness product. Polyphenol content is what determines which side of that line an oil sits on.
That concentration is set at the grove, not the factory. Peer-reviewed research consistently shows that early harvest olive oils — pressed while the olives are still green and unripe — contain significantly higher polyphenol levels than oils produced from fully ripened fruit. Mazzotti et al. (2017) confirmed that early harvest EVOOs demonstrate both higher total phenol content and greater antioxidant capacity than their late harvest counterparts.
The trade-off is yield: green olives produce less oil per tree, which is why genuinely high phenolic olive oil is always produced in smaller quantities and at a higher cost.
How to read the oil before you read the label
There is a sensory test that experienced olive oil tasters have relied on for generations, and which science has since explained.
A high polyphenol olive oil will produce a distinct, peppery sensation at the back of the throat. A 2005 study published in Nature established that this throat sensation closely correlates with the presence of oleocanthal — one of the key polyphenol compounds in early harvest Greek extra virgin olive oil.
A mild or neutral finish, on the other hand, is a reliable signal that polyphenol content is low, regardless of what the label says.
Beyond the throat test, look for a harvest date rather than just a best-before date, a declared polyphenol concentration from independent laboratory analysis, and a clear statement that the oil is cold pressed and early harvest.
These are the signals that a producer has prioritised polyphenol content over yield.
Why not every producer makes high polyphenol EVOO
It is a reasonable question. If early harvest produces better oil, why do not all producers do it? The answer is economics.
Green olives yield significantly less oil per tree than fully ripened fruit. The harvest window is shorter and more labour-intensive. Each batch requires independent laboratory testing to verify polyphenol concentration.
And because the oil is produced in smaller quantities, it commands a higher price that not every market is ready to pay.
For a large commercial producer, the incentive structure simply does not support it. High polyphenol olive oil remains a speciality of small, committed family producers — which is precisely why provenance and transparency matter so much when choosing one.
